Mama‘s Muesli

My kids love homemade muesli/granola, whatever you want to call it. Every week or so I whip up a baking tray full of different kind of oats, nuts and dried fruit and keep it stored in a tin container so that the kids and my husband can have it for breakfast with creamy yoghurt and fresh fruit, or just grab a handful to snack on if they feel like it (which they often do ☺️).

The great thing about this recipe is you can swap the nuts out for whatever suits your taste buds best, same thing applies to the dried fruit (I would keep the total quantities the same though, so that the quantities of the liquid ingredients are still accurate).

If you want it sweeter and crunchier, add a few more tablespoons of maple syrup to the dried mix before putting it into the oven.

This is a great recipe to make on the weekend so that you have it ready come Monday. If it lasts that long..!

Fill one oven baking tray completely

500g oats

100g macadamias, chopped

200g almonds, skins on, chopped

2 good pinches of salt

5 Tbsp. olive oil

8 Tbsp. maple syrup

2 tsp. ground cinnamon

100g dried sour cherries (to be added after baking!)

• Mix all the ingredients except for the dried cherries in a large mixing bowl. Mix together really well!

• line a large baking tray with baking paper. Spread the Müsli out evenly on the tray

• bake at 175 degrees Celsius for 20 minutes

• give a really good stir and then bake for a further 10 minutes. Store, once completely cooled, in an airtight container. Enjoy!

    I made this the night before we went on a family hike so that we could start the day with some energy, and I brought some along on the hike for snacks in between. The macadamias were so good in the mix! I raided the pantry for the rest of the nuts, and used what I had left over: walnuts (sorry…. I know you’re not a fan 😉 ), pumpkin and sunflower seeds. After baking, I put dark chocolate and cacao nibs in half the batch, and I added dried cranberries to the other half. It was pretty addictive!
