
This dish is SO easy and SO unbelievably delicious. It’s often the dishes with the least ingredients that become my favourites!
You could share this with someone but it wouldn’t at all be my recommendation. Buy some sourdough bread and use it to soak up the delicious juices that will be on the bottom of the pan. Eat straight out of the pan if possible, or else serve it directly onto your plate so as not to waste any of the tasty deliciousness. I promise, this will not disappoint!


Ingredients
15g butter
6 figs, halved
100g goats cheese, preferably with rind if possible (see photo above). Rip into chunks
A few sprigs of thyme, leaves plucked
2 Tbsp. maple syrup
1 Tbsp. balsamic vinegar
Chilli flakes, salt, pepper
• melt butter in a normal sized frying pan over medium heat
• while the butter is still melting, add the thyme leaves and stir well to coat evenly in butter
• when the butter has melted and is lightly sizzling, add the figs, cut side facing upwards!
• leave to sizzle gently (gently being the key word here!). After a minute or two, add goats cheese chunks to the pan (place next to the figs, not on top of). Turn the heat down so the cheese only softens, not melts
• drizzle maple syrup and balsamic vinegar over the figs and goats cheese. Leave to sizzle gently, allowing the juices to thicken slightly.
• remove the pan from the heat when the juices are syrupy and the goats cheese slightly softened. Now eat the whole thing by yourself, rinse pan and repeat 🥰.
