
Just a simple recipe for porridge for one. It makes a simple bowl-full, if you’re very hungry then definitely double the recipe!
I like the creaminess the yoghurt adds to the final dish and it is also great in cooling down the porridge so that you can eat it straight away. Cocoa nibs are high in antioxidants, rich in minerals (magnesium, iron, manganese), support heart health and help to manage blood sugar – among other things! They also add a nice crunch to the dish 😊
Ingredients
25g oats
Sprinkle of salt
1/2 tsp. cinnamon
5g coconut sugar
100g oat milk
100g water
50g full fat yoghurt
1 golden Kiwi fruit, diced into 1cm cubes
(Cinnamon to dust on top and maple syrup to drizzle on top of you like ❤️)
• Easy-peasy: Combine the oats, salt, cinnamon, coconut sugar, oat milk and water in a saucepan. Bring to a boil and stir for 2-3 minutes.
• Remove from heat, pour into a bowl and stir through the yoghurt.
• Top with cocoa nibs and chopped kiwi fruit. Sprinkle with cinnamon and drizzle with maple syrup if you like ❤️
