
Sometime I buy plums which look nice but don’t end up having a great texture or a big amount of flavour. When this happens, I like to stew them with as little effort as possible, resulting in maximum flavour! These are great served with plain, natural yoghurt, whipped cream or over ice cream. The best thing about them? You do t have to do anything once they’re in the pot!
Instructions
Take 6 plums, quarter them and remove the stone. Place them skin side down in a sauce pan so that they fit snuggly and are not overlapping. Cover with water, you want the water to be about 1cm above the plums. Sprinkle over 2 Tbsp. maple syrup and a pinch of salt and chilli flakes (optional!). Submerge a cinnamon stick under the water and bring to the boil.
Now lower the heat and leave to boil away gently until the water is basically almost completely gone.
Remove from the heat, stir and enjoy warm or cold!
