Dark Choc Bites

My son is finishing school this year and he’ll be off at university before we know it! He’s been asking me recently to post more recipes that are super quick to make and still really yummy – things he’ll be able to easily whip up when he’s no longer living at home.

These dark choc bites are too easy and still really yummy! I melted 200g of 90% Lindt chocolate, stirred in 150g of chopped cashews (halved), 50g of dried cranberries and 50g of dried sauer cherries. Add a pinch of pink Himalayan salt, spoon onto a piece of baking paper and refrigerate until cold. A delicious and not too naughty snack! ❤️

(Note: To melt the chocolate, put a few cm‘s of water into a saucepan. Place a steel bowl on top of the pan, add the chocolate (broken into pieces). Allow to melt, stirring occasionally. Don’t let the water boil – keep it on a low heat!)

Variations:

Use other types of chocolate if you’re a fan of milk or white choc. It doesn’t have to be dark chocolate used in this recipe!

Sub in any other dried fruit that you might prefer.

Toast the nuts before using for a risers flavour. Also sub in other nuts, depending on your preferences!

Add in or sub some of the nuts and/pr fruit for salty bits of toasted popcorn for a nice change!
